Mmmmm Mojitos…

Summer is the perfect time to get together with friends, spend some time outside, enjoy great food and drinks…

Recently we had some friends over made some delicious mojitos…and had some delish food [for me anything grilled is heaven]…a friend of mine brought some ingredients for a summer guacamole…as she started to take avocados, cilantro, limes and chilies out of the grocery bag, everything seemed as if this would be a traditional guac…but as the mango and blueberries made their appearance…I thought hmmm…I wonder how this blend of flavours will work…I’m usually a pretty adventurous eater and my husband and I are self proclaimed foodies…I was able to deal with the mango…but as the blueberries made their way into the bowl…my taste buds were very nervous…

Long story short…this recipe is AWESOME! [surprisingly] It really is delish…so try it…you’ll love it…the mango brought out a different flavour in the lime, and the blueberries were a nice touch of sweetness.

Mango Blueberry Guacamole

  • 3 ripe avocados
  • 1 chopped green onion
  • 2 fresh serrano chiles, finely chopped (2 tablespoons), including seeds [I’d use red chilies for some colour]
  • 1/4 cup fresh lime juice, or to taste
  • 1 pint blueberries
  • 1 diced peeled mango
  • 1/2 cup chopped cilantro
  • Halve, pit, and peel avocados.  Coarsely mash in a bowl.  Stir in green onion, chiles, 1/4 cup lime juice, and 1 1/4 teaspoons salt, then fold in blueberries, mango, and cilantro.  Season with salt and additional lime juice.
